Pandan Kaya Cake, Inspired by the Classic Kueh Salat

Known for its signature natural blue-tinge from Blue Pea flowers, commonly used in the Peranakan cuisine, the Kueh Salat is a delicious tiered-dessert of kaya custard and savoury glutinous rice base. Sinpopo’s rendition adopts a creamier textured Kaya custard similar to Kaya Toast spread, which uses traditional slow-stirred cooking method between soft, light cake layers.
